Well, for one, I can't get ginger marmalade around here. The last time I had that was when an Australian friend brought me some. But the texture isn't exactly a puree. It's hard to describe. It's not super-smooth. Almost grainy, but not in an objectionable way.
Ooooh. That sounds very like the candied ginger puree I used to be able to get at Trader Joe's but have been unable to find for more than a year. On the payday shopping list!
I've made a huge dent in the jar, but at two dollars and change, I can go ahead and stock up. (I know it's more on the website, but my local grocery store rocks socks.
