I've set up several of my chat accounts at work. My status should always
read "Working, but available", which of course means I'm here, but it may
take a while for me to answer you if you say something to me.

(The accounts I have open here are my googletalk, AIM, and LJTalk, because
I haven't figured out how to add the rest to iChat yet.)

I use the status "Nominally working" to mean the same thing.
