Well, I almost went with coffee cake (because of that wicked tempter bettybaker), but I think my International No Diet Day delightment will be my first-ever batch of empanadas. I've been wanting them lately, and the funny thing is that I've never eaten them. We were thwarted in getting some at a local restaurant yesterday, so I've taken a friend's recommended recipe and made a shopping list. All for me, bwa ha ha! (Unless you wanna show up for dinner, of course.) If they turn out well, I'll make more to freeze and have later.

The empanadas are in the oven. I made 7 large ones, rather than 15 small ones. They're pretty. If they're tasty, I'll make 'em more often, because they're dead easy (if a little labor-intensive -- not a LOT, but if you think making pie crust, for instance, is too fussy, you'll want to skip making them, and either buy them or come to my house). :-)

Good things about today:

1) Waking up happy and perky and in love
2) Spending the day eating yummy things and liking myself
3) Having dinner with mackenzie and eating way too many empanadas
4) Catching up with Miss mackenzie-Mack and seeing that she's still in one piece
5) Honey French yogurt
6) Tofu burger at Sconehenge. Way yummy, but way too much to finish
7) My mom and wtfpotatoes are getting along
8) The thing that's been taking up a lot of my mental energy is an exciting thing that I can tell you about in a few days
9) Getting to take a peek at the responses someotherguy worked on for his fundie-grams

Rough things about today:

1) Talking about babies, hearing about babies, and seeing babies make me sad about not having a baby

So it's running 9-to-1 for the good. I think I'll live. :-)
