Probable menu for the party next weekend:

Lots of good cheese and fruit and crackers and stuff (maybe bruschetta, depending on how much last-minute-ing I feel like doing)
Foofy coffee drinks
Italian sodas
Cookies
Something hot: fondue? chili? soup? dunno.
Fresh bread, if it comes out well

So what I wanna know is this: what's your favorite cooky recipe? The chocolate-chip ones in the Kitchenaid booklet have already been recommended to me, but I'd like to try another, too. What cookies do you make that everyone really likes? They don't have to be super-easy or super-fast to make, but they have to be *yummy*.

There is a cookie recipe at fatfree.com for Oatmeal Brownie Cookies that is SO good. Whenever I make it, I add a generous amount of dark mini chocolate chips for melty, gooey yumminess [these make all the difference to the recipe, so if you try it, don't leave them out].

They remind me of those 'brownie bites' you buy in the supermarket - only these are much cheaper, tastier, and you get more than six!

Here's my all time favourite cookie recipe. The best part is that you can put whatever you want in it. The base recipe is yummy all alone. The last time I made it I put hazelnuts, dark chocolate chunks and dried cherries in it. The time before rasins, crasins, currants and walnuts. The even bake ahead, and freeze well.

Best Ever Cookies
Book: Cris'
Chapter: Favourites

Serves: 4 dozen

1 cup unsalted butter
2 eggs
1 cup sugar
1 cup brown sugar
1 teaspoon vanilla extract
2 cups unbleached flour
2 1/2 cups chopped oats (chop in food processor)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups nuts of choice (optional)
12 ounces total chips and/or dried fruit (optional)

Cream butter and eggs, Add vanilla and sugars.

In a separate bowl mix flour, chopped oats, baking soda and baking powder and salt.

Slowly add dry mixture to wet mixture.

If desired add up to 1 1/2 cups of nuts and up to 12 oz chips/fruits.

Drop into greased/parchmented baking sheet by the tablespoon full.
Bake at 350 8 to 10 min until brown.

These are yummy (and super easy) meringue cookies.

No Peek Sea Foam Cookies

Book: Cris'
Chapter: Favourites

Mom and Aunt Bob's Christmas cookies

2 egg whites at room temp
Pinch salt
1 teaspoon vanilla extract
1/2 cup sugar plus 1 teaspoon sugar
6-ounce package semi-sweet chocolate chips (I like the minis)
6 ounces chopped walnuts

Beat egg whites until stiff peaks form.
Gradually add sugar, salt and vanilla.
Gently fold in Chocolate bits and nuts
Drop by 1/2 teaspoon onto parchment lined cookie sheets. (Or put mixture in large baggie. Cut off end, and squeeze onto sheet)
Preheat oven at 350 degrees.
Turn off oven, and leave in over at least 4 hours or overnight.
Do Not Open Door! Do Not Peek!

This may sound lame, but whenever I've made these people have LOVED them. Just make your favorite chocolate chip cookie recipe, and instead of adding the full amount of chocolate chips, substitute at least half with peanut butter chips. Peanut butter and chocolate - mmmmm!

peanut butter cookies!
Preheat oven to 350 F

1 cup peanut butter
1 cup sugar
1 egg.


Mix those three ingredients.

drop spoonful and flatten with a fork on ungreased cookie sheet.

bake ~7-10 minutes.

yes. that simple. yes, only three ingredients. but they're REALLY good!

Ingredients:
1 cup shortening or 1 stick oleo and 1/2 cup lard
1 1/2 cups sugar
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cream of tartar
2 3/4 cups sifted flour

SIFT dry ingredients together. CREAM oleo, sugar. ADD eggs. ADD flour gradually. FORM in balls size of marbles.

ROLL in mixture of 2 tablespoons sugar and 2 teaspoons cinnamon.

BAKE on greased and floured cookie sheet 10 minutes at 400°F

Well, it was kind of a comedy of errors making them (forgot to buy vanilla and baking soda -- used the pretty-new baking soda out of the fridge and left out the vanilla; forgot to put in the sugar until the end), but they're yummy (chopped toasted almonds and a little bit each of chocolate and butterscotch chips, and I used quick oats instead of chopping up regular).

They went from "nah, they could use another minute" to "ohmigod, they're totally burnt!" in about twenty seconds. There's nothing like the smell of burned peanut butter. :-) I'll try again in a little bit.
