High-protein muffinks

Anyway, I adapted a recipe from Gaye Hansen's Just Muffins, and it's really good. The protein/carb ratio is perfect for
someotherguy's food needs (two equal a meal, along with some kind of fruit or veg), and I find them so yummy I keep stealing them from him. I can't tell there's TVP in there. Next time I may try it with blueberries and/or cranberries and/or something else.
The parts I changed are in [brackets].
Whole Wheat Muffins
1 c. all-purpose flour
1 c. whole-wheat flour
1/2 t. salt
4 t. baking powder
1/2 c brown sugar or molasses [I used brown sugar]
2 beaten eggs
1 c milk
1/3 c oil
1/2 c chopped walnuts
[3 oz. by weight of TVP granules, mixed with slightly less water by volume than the TVP took up]
[Preheat oven to 425F.] Combine dry ingredients. Make a well in the centre. Combine liquid ingredients and pour into dry ingredients and stir as little as possible. Gently stir in nuts [and reconstituted TVP]. Fill greased muffin tins 3/4 full. [I used ungreased silicone muffin 'tins' and lined half with paper muffin cups just to see which would work better -- I won't bother with the paper next time]. [Also, I think it took the whole 15 minutes, maybe 16, for them to be done.]
