1/2-1 cup chopped nuts, optional (1/2 for the candy, 1/2 for the topping if you're using chocolate)
1 cup (1/2 lb.) butter
1 cup sugar
1 T corn syrup
3 T water or strong coffee
1/2 cup chocolate chips, any kind, optional
Sprinkle1/2 cup chopped nuts in cookie sheet. Set aside.
In heavy 2-quart saucepan, melt butter. Add sugar, water, and corn syrup. Cook and stir over medium to medium-high heat until mixture boils. Clip a candy thermometer to side of pan; continue boiling on medium at a moderate, steady rate, stirring frequently, till thermometer registers 290F, soft-crack stage (about 15 minutes). Watch carefully after 280F to prevent scorching. Remove saucepan from heat; remove thermometer. Pour candy into the prepared pan.
Let candy stand about 5 minutes or till firm; sprinkle with chocolate. Let stand 1 to 2 minutes. When chocolate has softened, spread over candy. Sprinkle with the 1/2 cup remaining nuts. Chill until firm. When candy is firm, lift it out of pan; break into pieces. Store tightly covered. Makes about 1-1/4 pounds (48 servings).

Watch Aaron pour his toffee onto his pan. "That doesn't look thick enough," says Serene. "I think you are going to end up with caramel."
Watch Serene pour toffee onto my pan. Sprinkle my own chocolate chips. Insist on hammering my chips into the toffee with the side of a knife, because it looked like fun to drive them into the toffee. "I think you just like whacking things," says somebody: I think, Serene. "There are things I like to whack," I concede.
Spread the melted chips around, the right way. Sprinkle nuts, chill.
Sample Aaron's candy which ends up in gobs in a bowl. It is caramel texture, but it tastes very good.
Fold another crane. Converse.
Sample my candy. It is perfect, because of course, Serene did most of it and I just did the children's part.
Thank you for a fun party, Serene! And now I have toffee for a week.

Date: 2005-12-10 03:53 am (UTC)after I'd moved out of my parents' home and moved to San Francisco, I flew to Chicago for a visit. My mother made some sort of cake and it was time to scrape the batter into the pans and then, voila, the licking of the beaters and bowl. but wait! she'd gotten used to handing this job over to the doberman she currently lived with, much to my shock. I managed to rescue a beater and the bowl, got a dirty look from the dog, and reminded my mother that it was fine when I was away but she could not give that job to anyone without first checking with me.
oh, and I can't wait to try this recipe. nuts will not be present, and chocolate, of course, will be.
