In the oven, the queen of all comfort foods, tuna casserole.

Which is odd, because my mother didn't *make* tuna casserole.

Oh, well, yum.

Sounds very good. I haven't had tuna casserole in years. Tuna is not one of [livejournal.com profile] stonebender's favorite foods.

I, also, have a comfort food in our oven - meatloaf. I'm just going to nuke some of the roasted veggies from last night and WA LA - a meal!

Are you using actual tuna, or is there some kind of tuna substitute that I don't know about?

My mother also never made tuna casserole. It became a comfort food in University for me because it was so easy to make and it would last a loong, looooong time when I cooked it for myself.

Well, I've been on a mac cheese kick lately and I don't remember my mom making us mac cheese. (Tuna casserole, yes.)

So I completely understand.

Then there's the lazy tuna casserole - Kraft Mac & Cheese and a can of tuna! Now that reminds me of my college days.

We were *just* talking about that. James's mom used to make it, but add about a quarter inch of cheddar cheese on top and bake it.

Oh, she did the "Company Coming for Dinner" version!

We added peas, too.

I still add peas to my (gluten-free) mac & cheese.

If I don't have peas in my tuna casserole, I get bummed.

I also make a cold spaghetti salad with tuna, and it *has* to have onions, peas, and mayo in it, or it's just wrong.

Actual tuna. There are tuna substitutes, though. Sea-vegetable tempeh is one, and here's a good review of Tuno from the Vegan Lunchbox blog (http://veganlunchbox.blogspot.com/2006/04/tuno-take-two.html) that references an earlier, bad review.

[personal profile] loracs's Mom used to make spaghetti with tuna. [personal profile] loracs has made it for me a few times. Surprisingly, I like it.

my mom didn't make it either, but she *did* dictate to me how it was made. how do you make yours? mine is egg noodles, cream of mushroom soup, nature's seasoning, tuna, and frozen peas added at the last second to the boiling pasta water, so they stay bright green.

oooh, i used to make that occasionally on mom's direction, too. but i always had a vague feeling that i'd just ruined both mac-n-cheese *and* tuna when i did it that way. i prefer the cream of mush version.

yes, it has to have peas or it doesn't have the right mouthfeel. fresh or frozen...canned peas are only good for Gruel. (crumbled hamburger, cream of mush soup, canned peas, served over white rice)

Haven't ever tried it, because I rarely have them in the house, but I keep meaning to pick some up just to give it a try. :-)
