wtfpotatoes has always been an adventurous eater (she and I shared sushi and pickled beets, among other things, when she was little), and she loves mixing her foods together.
Tonight, we had sandwiches for dinner: Turkey breast, tomatoes, mayo, on ciabatta. With slices of fresh pineapple on the side.
Turns out a turkey-tomato-pineapple sandwich is kinda yummy. Who knew.
With the right kind of tomatoes...that might not be bad at all! (I'm not a big fan of raw tomatoes--a childhood trauma)
I was hot, tired, cranky and had too many errands to try and cram into my afternoon so I made it to the farmer's market with BARELY 10 minutes left before folks packed up. Still I came away with a wonderful no-cook dinner for a hot day: Currant loaf with lemon quark as a spread: fresh white peaches, pesto jack cheese, and a cup of fresh boysenberry yogurt from St. Benoit creamery. NOM NOM NOM!
I also SCORED a vacuum sealer for $39.99 at Tuesday Morning so I can start vacuum packing this freshy goodness so things don't spoil on me faster than I can eat them!
Have you tried the marinated roasted tomatoes at Genova and/or the Berkeley Bowl? I think they're the same product, and I think they're YUMMY, but then I love tomatoes. What are your tomato parameters?
I've been avoiding feeding the teenager dairy (she and I are both lactose intolerant), but your dinner sounds SO GOOD!
I love tomatoes almost every way but raw. Sun-dried, roasted, salsa, marinara sauce,garlic tomato soup, if they're seeded well (like Romas) I can even do bruchetta--just give me enough wine!
Just don't give me half ripe, 'beefsteak' tomatoes that are all gel and seeds and half green and flavorless. And DEFINITELY do not demand that I eat them cold with mayo on wonder bread every day for lunch for a week because you're trying to use up the last of your garden when I have peanut butter and jelly right there in my fridge! Especially if I'm eight.
