If I were to buy (or check out of the library) just one Madhur Jaffrey cookbook (at least to start with), which would you recommend?

Madhur Jaffrey Indian Cooking if you're looking for a good overview of Indian cooking, this really, IMHO, covers the basics. She also has a *great* vegetarian cookbook...

A friend (who is Sri Lankan, not Indian, but she says the methods are really similar) made me a *wonderful* tray of curries and brought them to my house. She also told me how she makes dal. It made me really want to re-learn real Indian cooking, which I haven't done since my days in the commune.

World Vegetarian is a wonderful cookbook, but it's organized by main ingredient so it may not suit your purposes as well as a cookbook that's focused on Indian cooking.

World Vegetarian is the only one I have, but I can vouch that it's a great book. Very useful, especially if you have a couple of ingredients on hand, and vague idea of what cuisine you want to make--usually you'll find a couple of things that match.

I bought this book</a for a friend of mine as a gift a few years ago, and it rocks. It's got a lot of technique info and info on ingredients that might not be as easy to find here. If you want a higher percentage of Indian recipes, WORLDS OF THE EAST VEGETARIAN COOKING is the Jaffray I got started on. It tells you where each recipe is from. Its samosas are stupendous.

We also have Foolproof Indian Cooking, which is very pretty. i haven't used it--i bought it for boy, as it has lots of non-veggie dishes.

if you want a REALLY good book on Indian cooking, try Julie Sahni's "Classic Indian Cooking." the section at the front on ingredients and techniques is *fascinating*.
