If I were to buy (or check out of the library) just one Madhur Jaffrey cookbook (at least to start with), which would you recommend?

We also have
Foolproof Indian Cooking
, which is very pretty. i haven't used it--i bought it for boy, as it has lots of non-veggie dishes.
