Cooking fun

asking people to give me recipes to try. I had a delicious spinach dish
from
firecat's OH (who has no LJ, and to whom I'm copying this
post). I took the leftovers to work, and when they cleaned out the
fridge, they tossed my spinach, and I was very sad. Anyway, it was really
good.
Then I bought all the stuff for the OH's stir-fry recipe (which actually
doesn't strike me as stir-fry, and which I planned to completely revamp
with fresh ingredients) and got too busy to cook it, so I've been eating
the veggies piecemeal for the last couple of days. I'll get around to
both of the other two recipes as soon as I can, and it feels like a fun
project.
All of which is to say "Give me more recipes!" Either here or there,
please shoot me your favorite vegan recipe or one you want veganized, and
I'll give it a shot. I already know the spinach will be a favorite, even
if it does have wine in it.

Cook rice. Add spinach, black-eyed peas, and a bit of hot sauce.
My uncle Ray used to make a dish that involved sauteeing huge amounts of parsley with large amounts of garlic and slivered almonds. Oh my ghod was that good.
I've been known to make ramen, drain most of the water, and add chunky peanut butter. It's sort of Thai-flavored.
One of my favorite fall snacks is cranberry sauce (either whole-berry or jellied) on Saltines. (Has to be Saltines; other brands just aren't the same.) (For me.)
