Behind the cut is the yummy vegan dinner we had the other night: Black beans, brown rice with tomatoes and spices, spicy green beans, and very yummy eggplant that I dredged in flour/salt/pepper and fried. I could have eaten a massive pile of the eggplant, but it was all good.
