I loved Il Postino. Should I read the Discworld books before the Science of?

Depends on why you haven't read them yet. If you just haven't gotten around to them, then yes, do read the lot - they're marvellous :) If otoh you have a Violent Antipathy to All Things Discworld, Sourcery and Interesting Times should have enough background material between them to follow the Science of Discworld books. The latter are a brilliant exploration of the Scientific Method and the history thereof, set within a Discworld story as a framing device.
