What is schmaltz??

Date: 2006-07-28 08:54 pm (UTC)It's rendered chicken fat. Basically, the fat left over from frying chicken skin and onions together until the skin is crisp. The fat ends up about the hardness of butter when you put it in the fridge. SO yummy.
