My boys like them, so I made more. The neighbor thinks I should go into business selling them. I have to admit that even I have had more than my share:

Cinnamon buns!

Want some? There are still more of these, or you can come over [livejournal.com profile] stonebender's on Saturday evening and get some fresh. ;-)

I got it from my bread-machine group, and I'm not sure the file is accessible to non-members, so I'm posting it here. I find the instructions amusing. For instance, I used bowls for mixing the ingredients, rather than the bowels the directions call for. :-) All the text is someone else's, including the notes. I used all-purpose flour, because I was out of bread flour. The were ever-so-slightly denser, but still yumma. Also, I used dry milk powder, and I used regular active dry yeast, not instant. The rolls don't really brown, either, so I ignore that part now.

Cinnamon Rolls

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
The Dough
1 1/2 Cups Warm Water
4 Cups Bread Flour
3 Tbsp. Buttermilk Powder or Dry Milk Powder
1 1/2 Tsp. Salt
1/4 Cup Sugar
3 Tbsp. Butter
2 1/2 Tsp. Instant Yeast
The Filling
1 Cup Brown Sugar
1 Cube Butter -- (8 tbsp.)
1 Tbsp. Ground Cinnamon
The Icing
3/4 Cup Powdered Sugar
1/2 Teaspoon Vanilla Extract
4 Teaspoos Milk

Place all ingredients in your machines fully assembled pan in the order recommended by your machines manufacturer. Place the pan in your machine. Select the dough/manual cycle and press start.

In a small bowel combine all the filling ingredients and mix until well combined. You may need to microwave the butter for 15 seconds to soften it a bit. You DO NOT want to melt the butter.

In a small bowl put the powdered sugar and 1 tbsp. milk or cream and the vanilla. Mix well. You may need to add the extra tbsp. of milk or cream. However, the icing should be kind of thick, but drizzlable.

1. Make the dough & filling using the recipes above. When the dough is finished remove it from the pan to a floured surface. Knead a few times coating well with flour. If you needed you can work additional flour in to the dough if it is too sticky.

2. Roll the dough out in to a rectangle that is wider than it is long. It should be about 1/2" thick.

3. Spread the filling over the dough in an even layer.

4. Roll the dough up jelly-roll style. Try to get it as tight as possible.

5. Starting at one end of the dough roll start cutting off rolls. Each roll should be about 1-inch thick and you should get 12 rolls total.

NOTE: Because I don't like the ends I tend to trim the dough roll at both ends. I usually take off about 1/2 to 1-inch from each end. You don't have to if you don't want to.

6. Place the cut rolls in the a greased high sided baking pan. Cover the rolls with a damp towel and place in a warm spot to rise for 10 minutes.

7. Place the rolls in a cold oven. Set the oven to 250 degrees and bake for 40 minutes or until browned.

8. Remove the rolls from the oven and allow to cool for 10 minutes and then drizzle the glaze over the warm rolls.

NOTES : There is nothing like the smell or taste of old fashioned cinnamon rolls for breakfast. These are a sure way to get your family out of bed in the morning.

I'm not surprised they don't brown. 250 (I assume F, as 250 C is too high for most ovens) is the lowest temperature I've ever seen for baked goods, and I'm not sure I'd be capable of following that temperature instruction if I was making these. I might go for 150-160 C (300-320 F).
