I just threw it together. For four pans like that, it was two onions and three cloves of garlic sauteed in olive oil, two boiled chickens, two cans of green enchilada sauce, 52 ounces of cheese (so a little less than a pound a pan), and two cans of black olives.

For the filling, I mixed the chicken and onions and olives and some of the sauce and cheese (leaving enough sauce and cheese for the top layer. For each pan, I poured a half cup of sauce in the pan, laid down 6 corn tortillas, put on a layer of filling, then did that again. On top, just some sauce and cheese. 350F for about an hour.
