Mar. 9th, 2008 10:14 amI have the second batch of two pounds of pinto beans in the pressure cooker, and the first batch is simmering on another burner. Three and a half pounds of rice are turning into a Spanish-rice-ish thing in the oven (I find that boiling large quantities of rice doesn't work as well as baking it). I've cleaned my workspace just enough so that I'm not a serious health hazard to my neighbors, but it's not exactly a cooking show here. I have 40 burrito-sized tortillas ready for filling. (I am thinking about whether it's logistically feasible to warm them first. Where I come from, one always warms a tortilla first.)
There are also 40 juice boxes, some packets of taco sauce, and napkins. Like a dodohead, I forgot lunch sacks, so they won't be bagged into lunch kits, but that should be okay.
