just made a big huge mess of vegan rainbow potato salad for [livejournal.com profile] rmjwell and RA's barbecue tomorrow. Picked up [livejournal.com profile] sogwife (which involved no small amount of traffic) and got over my stomach bug. Now I will shower, clean up potato-salad dishes, and get some sleep before tomorrow. We may go yard-sale shopping in the morning, and I need my beauty rest. Have a wonderful weekend, everyone!

Rainbow potatoes? I know there's a reddish-blue kind, but isn't two colors still a little few for a whole rainbow? (And I wouldn't figure you as the kind of person that puts food colouring into stuff.)

White potatoes, purple potatoes (really purple, not artificial), carrots, red peppers, green peppers, celery -- I could use some yellow in there, but I'll cope, since I don't do eggs. :-)Æ

Well, how about yellow peppers? *g* (Veggie peppers, not the small hot ones) Otherwise, well, yes, there aren't many yellow veggies. Pickled pumpkin, maybe, though that wouldn't go with potatoes very well, I fear.

Roasted yellow squash might be good in there. I've never had it in potato salad, but I've never had carrots, either.

Yeah, but it wasn't rainbow salad on purpose. I made white-and-purple potato salad. My potato salad always has carrots in it. Added green peppers. Asked [livejournal.com profile] someotherguy whether or not I should use red peppers, and he noticed I was making a rainbow. :-)
