I also used to find eggnog much too sweet and the only way I could drink it was to cut it with milk [or booze, lol].
Now, I make my own homemade soy nog and I can control the amount of sweetener that goes into it. I like it so much better!
I particularly love all the tasty things you can do with leftover eggnog ... quick bread, cheesecake, kringla, etc. Yum!!

Oh, I didn't make it. I have a feeling if I made eggnog, I would cut the sugar by about half. It's always too sweet for me.

No it's really quite simple.
600 gallons whole milk
200 gallons half and half (unlike your whipping cream it's homogenized)
150 pounds of powdered egg nog solids
50 gallons of corn syrup
and 1 pound of nutmeg
Blend at low speed and pasteurize.
Enjoy!
