Oh, and if you want, you can see pictures of the eggplant-and-fresh-mozzarella dinner that someotherguy and I had tonight. There was enough to make a parmagiana-style casserole out of what was left, and we'll have it tomorrow night. Dinner's at 7, if you wanna stop by. :-)

I do something very similar with eggplant, only I usually use pesto instead of tomato sauce....

My new place has space for an herb garden. I'm fantasizing about a huge basil plant, which I can trim every once in a while to make a huge batch of pesto....

We had basil at the commune. One of my favorite uses of it was Trudy's "Special Rice" which was basically brown rice fried with onions and grated carrots in oil, garlic, soy sauce, and fresh basil. The good thing about it was even when the basil went to seed, it still worked in this recipe. Mmmmm, yum.
